We associate coffee with the color brown because that’s the hue it gains after being roasted, but coffee beans are naturally green. Green coffee is simply obtained from the beans before they are roasted. That’s all there is to it.
There are claims that green coffee helps to boost your metabolism and it’s been used to help with weight loss. Some specialists also believe it has antioxidant properties, that it can boost your immune system and that it helps to reduce the appearance of aging.

Getting your hands on this drink isn’t as simple as going over to the nearest coffee shop and asking them not to roast their coffee. The unroasted beans need to be soaked in water for many hours, a bit like a tea that’s steeped for a looooong time.
